How to make it

The Berry Sauce

  1. Cut the apples into small slices and add to a medium sized sauce pan with the 2 tbsp of sugar, heat on low heat.
  2. As soon as the apples begin to loose moisture, add the berries (other fruit works as well, like mango).
  3. let simmer on low heat and stir once in a while, for about 10 minutes.
  4. Chop the walnuts into small pieces and add to the sauce pan, stir and add a sprinkle of cinnamon, let simmer for another 2 minutes.
  5. Take off the heat.

The Pancakes

  1. Combine the egg and the whole milk in a bowl, stir until homogeneous.
  2. In a big mixing bowl combine the flour, sugar, salt, baking powder and whisk it all together.
  3. Add the milk into the flour mixture whisk them together until a smooth, liquid dough forms.
  4. Melt the butter and incorporate into the dough, slowly.
  5. Let it rest for 5 minutes.
  6. preheat a non stick pan over medium heat and grease with a little bit of butter.
  7. add roughly a 1/4 cup of the pancake mixture into the pan for each cake, with a large pan 3 should fit at the same time.
  8. cook for 2-3 minutes before flipping.
  9. Flip and cook another 1-3 minutes until golden brown on both sides.

How to Serve

  1. After all pancakes are done, arrange by spreading each one with some greek yogurt.
  2. Stack them on top of each other until a small tower forms.
  3. Top off with the berry sauce, also add some on the side.
  4. Enjoy!
